We Aim to please

Bin 707 Foodbar is a full service seasonal American restaurant serving Brunch, Lunch & Dinner from 10 am until "at least" 10 pm daily. We pride ourselves in responsible sourcing from "local, Colorado & domestic sources" to execute a unique, thoughtful and accessible experience time and time again. 

We don't take reservations and seat on a first come, first serve basis. Stop by, put your name on the list and have a quick stroll down Grand Junction's Main Street. We'll call you when your table is ready!

Every item on our menu has a story. There is a purpose behind everything we do, whether it's where we source our Colorado lamb or why we top our grapefruit curd with a beet merengue. With a vast knowledge of classic recipes, we are never reluctant to create a dish that has hints of the classic but ultimately reinvents the idea. 

Grand Junction is the heart of Colorado's  Grand valley- a fertile oasis in the desert. We are surrounded by agriculture- whether its farms, orchards, or wineries- allowing us to develop strong relationships to our ingredients and our suppliers. 

 

 

Almost our entire menu is made from scratch, with the exception of some charcuterie and artisan cheese selection, ensuring that every meal enjoyed at Bin will be fresh, high-quality, and locally sourced. 

We aim to provide a unique full service dining experience that is both casual and welcoming, while being inventive and ahead of trends. Eating at Bin 707 Foodbar is always an adventure, although no matter how adventurous the menu may get, the Bin Burger served with beehive white cheddar and twice cooked, hand cut daily "skinny fries" will never fall out of fashion.

Josh Niernberg EXECUTIVE CHEF

Armed with an industry knowledge unmatched in Colorado and while working towards a degree in Industrial Design, Josh had an idea to combine art, business and engineering to create a restaurant unlike any other. The result was Bin 707 Foodbar- a think tank for food as applied to industrial design where Josh- a certified Sommelier and fifth-generation Colorado native- drives the development, prototyping, production and marketing of the menu. 

Ryan Sylvester director of culinary operations

Gaining valuable skills and an important base of knowledge at one of Denver's best Italian restaurants, Ryan was able to secure more exciting jobs in boundary-pushing restaurants in Denver's thriving restaurant scene. The farm to table movement was calling, however, and after moving to Paonia, Colorado, Ryan opened a mobile Yakitori Grille called Skewer. A part-time position at Bin 707 quickly grew into a full-time one where Ryan serves as Director of Culinary Operations. 

Danielle Hinrichs     chef de cuisine

A veteran in the restaurant industry, Danielle has worked her way from line cook to kitchen manager in a wide variety of restaurants, building on each job until she landed in the Bin kitchen with a broad range of skills and culinary experience. That experience and her commitment to the Bin mission lead to her position as Chef de Cuisine.
